Tamarind, Mozzarella and Zucchini Tarte
This really simple but glamorous Tarte will be sure to impress with its good looks and taste. And you can substitute with other vegetables and cheeses*
You will need:
- 2 sheets of pre-rolled flaky puff pastry
- Jenny's Kitchen Tamarind Chutney 'Hot' (or whatever you prefer)
- Mozzarella Cheese (or substitute with blue cheese or feta for a bigger flavour)
- 4-6 small Zucchinis, finely sliced
- 1 Egg
- Olive Oil
- Sage Leaves
To prepare your Tarte:
1. Preheat your oven to 200c
2. Line a baking tray with baking paper. Cut each square of pastry in half, and place on the baking tray. Score the edges lightly to create a border about 1.5cm in from the outside. Poke a few fork holes in the base of the pastry.
3. Spread each inner rectangle with 1 heaped teaspoon of chutney, and lay over the sliced cheese. Trim the zucchinis so they are only as long as the width of the inner rectangle, then slice them finely and layer them over the cheese. Season well with salt and pepper, and drizzle with a little olive oil. Beat the egg, and glaze the pastry border.
4. Bake for around 18 minutes. Toss the sage leaves in a little more oil, and sprinkle them over the Tarte, then bake it 2-3 minutes longer until the Tarte is golden.
5. Enjoy with a little more Jenny's Kitchen Tamarind Chutney on the side.
* Delicious variations: Try this same recipe other vegetables and cheeses, e.g. :
- Thinly sliced or pre-roasted pumpkin, feta and pumpkin seeds
- Red Onions, Blue cheese and walnuts
