Tamarind and Pesto Stuffed Mushrooms

Get a little gourmet with your BBQ (or oven), with our  fabulously easy Pesto and Tamarind Stuffed Mushrooms

You will need:

  • Basil Pesto (bought or home-made with the recipe below)
  • Jenny's Kitchen Tamarind Chutney (whatever heat you have on hand)
  • Fresh Basil leaves
  • Open Mushrooms

To Prepare

  1. Wipe clean your mushrooms
  2. Smear about one teaspoon of pesto over the top of each
  3. Dollop about 1/2 teaspoon of Tamarind Chutney on top
  4. BBQ them until they are soft and delicious (or bake at 200 deg)


To make your own Pesto (or use bought)

Whizz together:

  • 2 cups Basil leaves
  • 2  garlic cloves
  • 1 handful of pine nuts
  • 2 tblsp grated Parmesan cheese
  • 1/2 teaspn each salt & pepper
  • 2/3 cup olive oil
