Tamarind and Pesto Stuffed Mushrooms
Get a little gourmet with your BBQ (or oven), with our fabulously easy Pesto and Tamarind Stuffed Mushrooms
You will need:
- Basil Pesto (bought or home-made with the recipe below)
- Jenny's Kitchen Tamarind Chutney (whatever heat you have on hand)
- Fresh Basil leaves
- Open Mushrooms
To Prepare
- Wipe clean your mushrooms
- Smear about one teaspoon of pesto over the top of each
- Dollop about 1/2 teaspoon of Tamarind Chutney on top
- BBQ them until they are soft and delicious (or bake at 200 deg)
To make your own Pesto (or use bought)
Whizz together:
- 2 cups Basil leaves
- 2 garlic cloves
- 1 handful of pine nuts
- 2 tblsp grated Parmesan cheese
- 1/2 teaspn each salt & pepper
- 2/3 cup olive oil
