Golden Roast Tamarind Chicken
This superb dish is embarrassingly easy, yet turns out stunning results. Chicken drumsticks that are golden brown, and beautifully flavoured with just a little heat. Totally moreish.
Simply take your chicken drumsticks and slather them in enough Jenny's Kitchen Tamarind Chutney 'Hot' to coat them well. Marinade them in the fridge for 30 minutes to 2 hours.
Spread the drumsticks onto a baking dish lined with baking paper and roast them for around 40 minutes at 200 deg C. Before you serve them, stab the thickest part of the largest drumstick with a knife to ensure the juices run clear.
We served ours with a simple garden salad and crunchy golden potatoes. For the potatoes, simple chunk them, and roll them in seasoned flour. Then add them to a baking dish with a few tablespoons of hot oil in it. Roast them for 20-30 minutes turning them once.
